Chipotle-Style Bowl at Home!!

You need to try this! Are you a fan of Chipotle (how could you not be), then this meal prep is for you. It is super easy to make and leftovers will be amazing. Try it out and tell me what you think.

LET'S GET INTO IT!

 

INGREDIENTS

(feeds 3-4 people)





Chipotle Chicken

  • 3-4 Chicken Breasts

  • 5 Garlic Cloves

  • 1 Tbsp of Olive Oil

  • 2 tsp of Salt

  • 1 tsp of Black Pepper

  • 7 oz. Can of Chipotle Peppers In Adobo Sauce

Cilantro-Lime Rice

  • 2 cups Quinoa /Rice

  • 2¼ cups water or broth

  • 1 tsp of salt

  • ¼ tsp of cumin

  • 2 tbsp fresh cilantro

  • 2 bay leaves

  • 1 tbsp of olive oil

  • 1 tbsp lime juice


Garlic Beans

  • 1 can of pinto or black beans

  • 1 garlic clove

  • ½ tsp of dry oregano

  • ¼ tsp of cumin

Sauteed Vegetables

  • 3 Bell Peppers (green, yellow, red)

  • ½ tbsp of avocado oil

  • 1 medium red onion

  • 1 tsp of oregano

  • ½ tbsp of red pepper flakes

  • ½ tbsp of salt

  • ½ tbsp of black pepper

 

DIRECTIONS

40 mins | Prep: 20 mins | Total: 1 hour

  1. Combine peppers in adobo sauce, olive oil, salt, and pepper into marinade bowl. Chop 2 garlic cloves and add to marinade, leaving the other 3 cloves to be inserted into the chicken breast.

  2. Slice along grain of chicken breast and insert remaining garlic into slots. Then add the chicken into the marinade bowl and let it sit for 20 minutes.

  3. Rinse and drain the quinoa. Then heat the olive oil in a medium sauce pan and add quinoa. Pour in the liquid and bring it to a boil, adding the salt, cumin, and bay leaves.

  4. Once cooked, place the quinoa in bowl and combine lemon juice, lime juice and chopped cilantro.

  5. Heat the olive oil for the chicken in a large pan on medium heat. Then cook the chicken breast for 5-6 minutes on each side. Then allow to rest for another five minutes.

  6. Combine the garlic bean ingredients in a small pot. Then cook for 5 minutes while stirring.

  7. Slice the bell peppers and onion thinly. Then heat the oil in a medium skillet, adding the peppers. Cook the peppers for 4 minutes and then combine and add the remaining ingredients. Cook until peppers soften.

  8. Slice or chop the rested chicken to your desired size.

Serve the individual ingredients and create a Make Your Own Bowl experience for everyone to enjoy!


***P.S. You can use leftovers to make a delicious salad for lunch the next day! Two for one!
