Avocado Egg Bombs- Keto Breakfast

Is it really keto if you're not eating eggs and avocados? Heres a tasty way to combine these keto staples that might help you switch it up a bit. Time to break out the air fryer!


Avocados are full of folate, fiber, and healthy fats. So are eggs! This combo makes it easy to get all your nutrients in and it still tastes good.

 

INGREDIENTS

(2 servings)




  • 2 brown eggs

  • 1 avocado

  • 1 tsp garlic

  • 1 tsp black pepper

  • 1 tbsp shredded cheese

  • 1 stalk green onion (chopped)

  • 1 pinch cayenne

Calories: 350 Total Fat: 30g Carbohydrates: 9g Protein: 16g

 

DIRECTIONS

Cook: 15 mins | Prep: 10 mins | Total: 25 mins

  1. Cut avocado in half and remove the seed. Depending on the size of your avocado, you may need to carve some of the avocado meat out.

  2. Place the halves on separate sheets of foil and mold the foil around it to make a stand. You can also use small oven safe bowls to work as your holder.

  3. Crack an egg into one half and follow with adding the seasons. Repeat for the other half.

  4. Place the halves into the air fryer or oven and cook at 375 degrees for 15 minutes.

  5. Finish with shredded cheese and chopped green onion then serve!
